PUMPKIN/RAISIN BREAD
Ingredients:
2/3...cups shortening
2 2/3.cups sugar
4.....eggs
2.....cups pumpkin** or 16oz canned pumpkin
2/3...cups water
3 1/3.cups all-purpose flour
2.....teaspoons baking soda
1 1/2.teaspoons salt
1/2...teaspoons baking powder
1.....teaspoons ground cinnamon
1.....teaspoons ground cloves
2/3...cup coarsely chopped walnuts
2/3...cup raisins
**You can use your old Holloween pumpkin--Simply deseed,peel,
and boil in water till soft.Add a cinnamin stick and
about a 1/2 cup suger to the water.Strain and mash--be
sure to remove the cinnamin stick.
Directions:
Heat oven to 350*. Grease bottoms only of 2 loaf pans, 9x5x3 inches.
Mix shortening and sugar in large bowl. Add eggs, pumpkin and water.
Blend in flour, baking soda, salt, baking powder, cinnamon and cloves.
Stir in nuts and raisins. Pour into pans. Bake until wooden toothpick
inserted in center comes out clean, about 1 hour 10 minutes;
cool slightly.
Loosen sides of loaves from pans; remove from pans by running a knife or
spatula around the sides, turning upside down and jently shaking.
let cool slightly for better cutting, and enjoy!
