Mom's Mincemeat Cookies
Unique Family recipe! Can't find these anywhere but here.
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butter (softened)
- 1 1/2 cups sugar
- 2 eggs
- 1 Tablespoon grated lemon peel
Filling
- 1 cup mincemeat
- 1/4 cup walnuts
- 1 teaspoon lemon juice
- 1 egg yolk
- granulated sugar for sprinkling

- Directions
Preheat oven to 375 F. Bake for 12 to 15 min. or until golden brown
Makes 1 doz. cookies.

Sift together the flour, baking powder, and salt into a large mixing bowl.
In a smaller bowl mix together the butter, sugar, eggs, and lemon peel. Mix with
a wooden spoon untill light and fluffy.
Mix the flour mixture and the egg mixture together. Form dough into a ball and
refrigerate for an hour.
- Filling
Mix together well the mincemeat, walnuts, and lemon juice. Set aside.
- Assembly

Roll out a quarter of the dough at a time, to about an 1/8 inch thick.
Cut out circles, using a drinking glass or a cookie cutter.
Place circles on a lightly buttered sheet pan, 1/2 inch apart, drop a teaspoon or so
on top of each pastry circle, cover each with another circle.
With a lightly floured fork, gently seal the edges around each cookie.
Mix the remaining egg with a Tablespoon of water and brush the tops of each cookie,
sprinkle with sugar, and bake.
