These are Great! I love these!! They can be made in so many variations. I use a variety of dried fruits, nuts and even chocolate chips and coconut flakes. Say good bye to store bought bars! And make them with what you like!
Yields 24 bars
Ingredients:
2 cup instant rolled oats
1 cup whole wheat flour
1 cup Grape-Nuts cereal
1 teaspoon cinnamon
6 Tablespoons brown sugar
2 eggs (beaten)
1/2 cup applesauce
1/2 cup honey
6 Tablespoons brown sugar
4 Tablespoons vegetable oil
1/2 cup unsalted sunflower seeds
1/2 cup walnuts (chopped)
1/2 cup dried mixed fruit (chopped)
Directions:
Preheat oven to 325 degrees F.
You will need two 9 inch square baking pans. Spray the pans well with cooking spray.
In a large bowl, stir together the oats, flour, cereal, cinnamon, and the brown sugar.
Add the egg, applesauce, honey, and oil. Mix well.
Stir in the sunflower seeds, walnuts, and dried fruit.
Spread mixture evenly in the prepared pan.
Bake for 30 minutes, or until firm and lightly browned around the edges.
Let cool. You can refrigerate for quicker cooling.
Once cool turn out from the pan by quickly flipping pan over onto a cutting board, then lifting pan off.
Cut into bars or squares, and store in the refrigerator.
