Cream Wafers

These creamy wafers are a tasty addition to our holiday cookie baskets. -They just melt in your mouth

Makes about 60 cookies

INGREDIENTS:

2 cup all-purpose flour
1 cup margarine or butter
1/3 cup heavy cream
granulated sugar
***Creamy filling recipe below**

DIRECTIONS:

Mix flour, margarine and cream into a dough and chill for an hour.

Roll out half at a time to 1/8" thick and cut in 1-1/2" rounds.

Carefully dip both sides of cookie in sugar and place on ungreased baking sheets lined with parchment paper.

Poke with a fork 4 times.

bake 7-9 min. at 375 F.

let cool for a good 10 to 15 min.

*Creamy filling:

INGREDIENTS:
3/4 cup powdered sugar
1 teaspoon vanilla
1/4 cup margarine or butter (definitely use real butter if at all possible!)
food color if desired red and green for the Christmas holiday.
DIRECTIONS:
Mix all filling ingredients until smooth,

add a few drops of water if needed.

to fill- place a large Tablespoon of filling on one of the cookies,(I like to use a pastry bag.).

carefully place another cookie on top and gently push together.
