Cherry Coconut Bars

Another family recipe, sweet and chewy with a cookie crunch and the cherries are good to munch while you bake.

 

 

Ingredients

  • 1 cup all-purpose flour
  • 3 tablespoons powdered sugar
  • 1/2 cup cold butter
  • FILLING:
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chopped walnuts
  • 1/2 cup quartered maraschino cherries
  • 1/2 cup flaked coconut
 

Directions

  1. In a bowl, combine flour and powdered sugar; cut in butter until crumbly. Press into a lightly greased 8x8x 2-in. baking pan. Bake at 350 degrees F for 20-25 minutes or until lightly browned. Let cool. 
  2. For filling, combine the eggs, sugar and vanilla in a bowl. Combine flour, baking powder and salt; add to the egg mixture. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes more or until firm. Let cool, cut into bars, and dust with powderd sugar.
