Been getting raves about my Banana Bread! Very tasty served warm with a little butter. Here it is, give it a try and let me know what you think.
INGREDIENTS:
- 1 3/4 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon ginger
- 1/4 teaspoon salt
- 1 egg (beaten)
- 2 bananas (mashed)
- 3/4 cup unsweetened applesauce
- 2 Tablespoons cooking oil
- 1/3 cup milk
- 3/4 cup walnuts (optional) **medium chopped
DIRECTIONS:
Preheat oven to 350 F.
In a large bowl, combine the flour, sugar, baking powder, cinnamon, allspice, ginger, and salt
In a medium bowl, combine the eggs, banana, oil, and milk. Add this mixture slowly to the flour mixture, add optional walnuts.
Mix until just combined. **Don't over mix**
Spray a 9x5x3 inch loaf pan with non-stick spray, and dust with flour. Make sure to cover the pan, then tap out excess flour.
Bake Banana bread for 45 to 50 min. or until a knife inserted into the center of the cake comes out clean.
Let bread cool 10 to 15 min. in the pan, then turn bread out and let cool on a wire rack.
**TIP**I like to add FRESH Huckleberries (1/2 cup instead of walnuts) If you cant get Hucks, use the smallest FRESH blueberries you can find.
